Last week’s baking went from super easy fluffy spelt scones with a cute little story to the more ‘majestic’ lemon mousse and raspberry charlotte royale. This lovely cake might seem complex but I’d like to say you really can make it quite easily so do have a go! It’s really worth it!
Then today I made my first healthier spelt lemon poppyseed cake! Like the charlotte this was also an ‘invented cake’ drawn from a hotch potch of ingredients and applying knowledge of various basic recipes. It’s a lovely buttery cake with a crunch so a little more tweaking and the recipe should be hitting cyberspace soonish! Since I’ve just discovered International No Diet Day (INDD), a May 6th annual celebration of body acceptance, in this spirit I’ve already tested a third of my cake! 🙂
Just a quick update: mid-April I posted a challenge proposal for anyone who liked the idea of making tres leche cakes together. I’ll be publishing our ‘group’ post Tres leches cake challenge linky party – the cakes we made! on May 14th (probably a ‘cosy’ little party!). So if bloggers could post their cake stories, photos and recipes (optional) on the 14th and link up to the group party post the same day (or slightly later) that would be great. And non-bloggers, could you get photos and comments to me by May 11th to include in the post? I know two bloggers have already made the cake. Anyone else out there? Looking forward to seeing them! 🙂
