These are delicious pastries and rather amusing! They look like fried eggs don’t they? Eggs are a symbol of Easter and rebirth so I thought I’d post this easy fun recipe you can make with kids. The roughly-shaped puff pastry bases are filled with a thin layer of blood orange jam or marmalade and 0% fat quark sweetened with a little pure maple syrup. The yolks are scrumptious baked canned apricot halves and the eggs are sprinkled with a little vanilla powder or chia/poppy seeds. When baked the quark mingles slightly with the jam for that special fried egg effect. Tada! Very yummy apricot and quark faux fried egg pastries!
RECIPE – for 6 medium-sized fried eggs
They’re my little invention and an attempt to make slightly healthier Easter fare! Lol. There was homemade spelt puff pastry in my freezer so that was handy but you could use good quality shop-bought all-butter puff pastry and probably even shortcrust pastry.
Puff pastry
200-220g/7-7 and 3/4oz puff pastry (homemade inverted puff pastry recipe here or good quality all-butter shop-bought)
Assembling
- 6 – 10 teaspoons blood orange jam or fine-cut orange marmalade
- 150g/5 and 3/4oz 0% fat quark
- 5g/1 tsp pure maple syrup, to taste
- 6 tinned apricot halves (drained from a can with light syrup)
- a few pinches of vanilla powder (or chia/poppy seeds)
Here’s the link for how to shape puff pastry shells in my basics section (the video’s set to country music).
Allow to cool.
Eating and storing
Puff pastries are always best eaten the same day or warm 30 minutes out of the oven. But keep extra ones in an airtight tupperware container in the fridge and they’ll still be yummy the next day (maybe on day 3 too).
Please help yourself… they make a great breakfast! 😉
Oooh…. runny yolk!
Bon appétit and farewell dear reader! Wishing you as always an egg-cellent fun week with yummy baking and eating! 🙂 Lili x

Hi Marianne! Lol, maybe they look too much like eggs!! 😄But they make me laugh. I was inspired by the traditional German Easter fried egg cake – you might be interested in it. Have a lovely day and week! Lili x 🙂
