Hello again sweet reader! Enjoying Easter or the end of the week? Even if you don’t celebrate Easter, these easy no-bake healthy recipes might come in handy! Bliss balls have become very popular: a healthy portable snack providing a shot of energy, sweetness and good things! So why not have some (Easter) bliss ball eggs and cocoa bites? I found some healthy bits and pieces in the kitchen, set about soaking, chopping and rolling and tada! Three kinds of treats: delicious Spirulina date and cranberry bliss ball eggs with matcha tea, ginger and orange zest, some more lovely energy ball eggs made of apricot and almond butter, and zingy healthy chocolates: Chilli lime, almond butter cocoa bites! Yum yum! This weekend me and ma’ taste buds will be bouncing around the rocks! And kids might also enjoy making these and taking part in general bunny-like bounciness! 🙂
I confess I really, really need these healthy little gems (really, really!). I’ve eaten far too much babka, aka Easter bread, this last week and urgently need a diet of vegetables, miso soup and bliss balls! Luckily very little energy is required to make them! And following the golden rule to keep tasting things as you go along I did of course nibble on them – frequently! I now feel quite ‘active’! Hop hop! Woohoo! Yeeha – must clean flat! (joking).
These are the easiest recipes ever. The most challenging thing is trying to save some for Easter Sunday! They’re good for you but I’m not sure if you should eat ALL of them in one sitting…?
So my dear sweet-but-healthy reader, here are the three recipes for you!
1. Spirulina date and cranberry bliss ball eggs
These are my favourite and absolutely delicious! The zingy orange zest and cranberries really add to the flavour, along with the ginger and other lovely ingredients! The spirulina and matcha tea are stimulants so I’d leave them out if making the eggs for children but I confess they seem to help me zip around and clear my occasional mental fog!
Stir and knead the mixture together with your hands. Then shape the eggs!
2. Chilli lime, almond butter cocoa bites
Wait, maybe these are my favourites. They’re so zingy and tasty. No need to temper the chocolate – the coconut oil keeps them shiny! Just went to the fridge to ‘test’ another one! … Yup, still okay! 🙂
Preparation
Find moulds! A chocolate silicone mould, perhaps with Easter shapes, or some little paper cases. Quantities given are for one mould of more or less 12 to 14 shapes.
Ingredients and recipe
.3. Apricot and almond butter bliss ball eggs – also delicious! Maybe I should go back to the fridge to ‘test’ one …
Stir, knead then form the eggs as in recipe no.1 (Spirulina eggs).
Storing your Easter goodies
The bliss balls and cocoa bites should be stored in the fridge (or freezer) in tupperware and keep for a few weeks (ahem). You can take your bliss balls out hiking or shopping with you. But you probably need to eat the cocoa bites quite soon once out of the fridge.
Improvising and more recipes
The bliss balls and cocoa bites are inspired by some great recipes in Jenna Zoe’s book Super Healthy Snacks and Treats, if you’d like to look for more great ideas for healthy snacking.
You can add anything you want to these Easter treats or leave things out. If you don’t like ground almonds, for example, then grind some cashew nuts or hazelnuts. Feel freeeeee to invent and improvise!
So I’m off to the fridge again now… just checking everything’s okay in there. Hee hee!
