These fig and apricot rolls have it all!  They’re so yummy, healthy and easy to make!  The filling is semi-dried moist figs and dried apricots blended with a little water, pure maple syrup and lemon juice.  It’s deliciously moist and lightly spiced with ground ginger, cinnamon and cumin which lift and subtly complement the fruit without overwhelming it.  The pastry’s similar to almond paste with ground almonds and pure maple syrup but there’s also a little coconut oil and lemon juice plus the raw organic coconut flour makes it taste more like cookie dough or cake bringing it to another level of yumminess and perfect texture.  These rolls are effortlessly vegan, glutenfree and refined sugarfree with the apricot and lemon making them not too sweet!  They contain great ingredients for your digestive system and you only need one or two as a satisfying dessert that makes you feel good!  Which is perfect as they keep a month in the fridge.  Hope you’ll try these raw fig and apricot rolls!  Great for perfectly balancing yumminess and health! 😉

THE RECIPE – makes 12 rolls

I was inspired to make these by the fig rolls technical challenge for this year’s Great British Bake Off biscuit week.  Made these instead – they’re healthy, not too sweet and not quite as challenging! 🙂  Have been loving watching the GBBO as always.

You can adapt this recipe using honey (not vegan) instead of maple syrup and other dried fruit.  And you can change the spices.

Ingredients

  • 13g/1tbsp virgin coconut oil, melted
  • 80g/1/2 cup semi-dried figs (still a little moist)
  • 40g/1/4 cup dried apricots
  • 90g/1 cup less 3 tsp ground almonds
  • 40g/1/3 cup (raw organic) coconut flour
  • 2-3 pinches fine sea salt, to taste
  • 50-53g/2 and 1/2 tbsp (plus optional 1/2 tsp) pure maple syrup
  • 6-7g/1/2 tbsp freshly-squeezed lemon juice

Eating and storing

Store in airtight tupperware in the fridge.  They should keep up to a month.

Right now they’re a very handy part of my pre-Italy diet.  I’ll be visiting family there soon and suspect there’ll be lots of yummy food.  Yum yum.  In the meantime these are naturally sweetening up my day.  Hope you’ll have one or two of these fig and apricot rolls too, such tasty guilt-free treats…

Baking on Sundays with my French mum was a lovely part of my childhood. Later I experimented with baking books or internet recipes and did the pâtisserie course at Le Cordon Bleu Paris.
