A fantastic slice of Apple tarte tatin with Chinese 5 spices and Tamarind made by Claudette, aka my mum! 🙂 The beautiful colours and arrangement of the relatively thin slices of apple make this a stunning and tasty looking piece of tart! Claudette reports both herself and her partner thought it was very nice and using ‘maple syrup instead of sugar is genius’. Made with Pink Lady apples which are ‘lovely, juicy and firm’ and need cooking on the ring a little longer than the 10 mins. Plus the pastry baked quickly in the oven so Claudette covered it with foil towards the end. She also used tamarind juice but will use the paste next time! 🙂
