Are you curious to see how everyone did with their tres leches cake?  They can be quite a challenge!  You need a certain consistency of sponge so the liquid doesn’t bounce off it!  And the right quantity of three kinds of milk to produce a cake that has been soaked but doesn’t disintegrate!  As for the taste, sweet but not too sweet?  Tres leches cakes are definitely a balancing act!  Now let’s appreciate the wonderful cakes everyone has made! 🙂

On Mother's Day I made my cake.  I used a Martha Stewart recipe I found online since I couldn't get to the box with my Mexican Cookbook. 90% of my books are packed and stacked in boxes in the garage while we're working on the house.  Anyway, the recipe was pretty easy, and I think the cake is delicious. Unfortunately, aside from #1 Grandson noone in my family likes milk so it didn't get rave reviews here. :(   So, I pieced it out to neighbors. What are neighbors for right? You can tell she’s a photographer can’t you?  Stunning!  Deborah reports the cake is delicious and the recipe easy, if you’d like to go over and check it out here!  The recipe she uses seems to be the classic go-to version, which is always great to know!  She also has a little story which involves a lucky work crew!  🙂

Here’s a photo and link for my ‘LIGHTER’ COCONUT, PINEAPPLE, LIME AND RUM TRES LECHES CAKE I had a few failures with dry sponges before succeeding.  I’ve discovered a very fine genoise sponge is a no-no because it doesn’t absorb milk well.  So I used granulated sugar instead of caster then added lime juice, creating a sponge with more ‘open pores’.   I forgot to pour the extra milks on and around the slice for the photo, which of course helps add that tres leches moisture!  The piña colada flavours were lovely but I’m pretty keen on trying all the other versions here!!! 🙂

Now here’s the link and photo for a very exciting ALLERGY-FRIENDLY COCONUT TRES LECHES CAKE from NINA of Healing with Food.  It’s beautiful and the raspberries will go really well with it!Great for all you guys who’d like a gluten and dairy-free version.  Hurray!  Nina uses gluten free baking flour, but do go over and visit her to find out how she made the three milks cake without milk and also uses coconut oil!

And the next version is a beautiful EXOTIC LEMONGRASS COCONUT TRES LECHES CAKE by Ten.times.tea.

This is such an interesting version, with the lemongrass that I’m sure we’d all love to experiment with now and the toasted black sesame seeds too!!!  Ten.times.tea also goes over the whole cake-making process really well.  Can’t wait to visit?!  Click on the name of her cake above, as for all the links!  🙂

Then comes the next photo and link for Sridevi’s super-moist-looking CLASSIC TRES LECHES CAKE with MILK CHOCOLATE TOPPING!!! over at Coconut craze.

I’m sure you’d love to visit Sridevi!  She has a great tip for making a sponge that soaks in the milks, and looking at the photo I’d say it works!  Really beautiful and moist!  Of course I love the addition of chocolate on top too! 🙂

This is one that Albert the Dog helped make!   Another beautifully moist version, a COCONUT TRES LECHES CAKE  with a TOUCH OF LIME! (article:  How to help your human bake a cake:  a guide for dogs).   Not only do you get a recipe but you can also enjoy reading about Albert’s hilarious adventures making the cake with his lady!  You really have to see the lovely photo of Albert the Dog with his chef’s hat!

It’s such a beautiful photo and cake!!  I’d say it looks very professional and I’m starting to crave a whipped cream topping after looking at this and some of the other tres leches cakes here!  There’s also a great idea involved for the topping, which gives it a little crunch!

Actually, every time I see everyone’s tres leches cakes I just go WOW!  And the first time you were making it too!  Impressive.  I’d like to make ALL the versions!  They look so yummy!

Linda made this just recently in April and reports that tres leches is the most delicious cake in the world and this one is a family favourite now!   She also has a great tip regarding vanilla beans!  Don’t forget to visit!  🙂

Baking on Sundays with my French mum was a lovely part of my childhood. Later I experimented with baking books or internet recipes and did the pâtisserie course at Le Cordon Bleu Paris. Still trying out new recipes and inventing cakes with influences from all around the world, including some healthier ones. Yes, love cakes!!! Hope you'll love them too and have fun baking. :)

  4. I never got to a post on our tres leches cake! I am so bad at this whole blogging thing sometimes. On the plus side, I did get to make one for the first time ever. And eat it. So two plusses there!
